For those of you who haven’t had the pleasure, Gyros* is probably the word’s best street-food. The meat (usually pork or chicken) is cooked on a turning spit, like a kebab, which is where the name gyro– round- comes from. Souvlaki is very similar, but uses higher quality chunks of meat, and is cooked on skewers on a grill.
Having spent most of lockdown pining for Greece, I’ve been determined to perfect these marinades, (sorry waistline!) My pork souvlaki has the richness of a gyro, while my chicken souvlaki sticks to the classic Greek flavours of lemon and oregano. I can’t promise the hot sun, but one bite takes you straight to Corfu.
